Dave Arnold is a 1988 graduate of Johnson and Wales University in Culinary Arts, and he spent a number of years in the restaurant industry. He has also been instructing at L’Academie de cuisine since 1994. This experience, ranging from the high-volume corporate restaurant to executive dining and catering, has given Dave opportunity to hone his culinary skills. At L'Academie de Cuisine, Dave instructs the Basic Techniques series, Intermediate Techniques as well as numerous specialty demonstration and participation classes. His practical attitudes towards food are evident in his culinary philosophy: build a solid foundation on fundamentals, build your confidence and then creativity will follow.
