Pastry Arts Scholarship Competition

The Roland Mesnier Pastry Scholarship competition is open to all interested applicants who are 18 years or older with no prior professional culinary or pastry education and not more than one year of professional culinary or pastry experience. Applicants must submit a completed and signed entry form no later than Friday, March 8, 2010. Applicants are required to prepare (from scratch) and submit one pastry presentation to serve at least 10 people. One grand prize winner will be awarded a $4,000 non-refundable tuition credit scholarship to be used toward the professional Pastry Arts Program. The scholarship award money will apply to students enrolling in the April, July 2010, and September 2010 programs. NEW CLASS: CAKE DESIGN COURSE

This is a FULL TIME, 3-week course designed to immerse people in the world of cakes and cake decorating. Students will start by learning the basics of making and baking a good cake and preparing various icings and fillings, and will move on to building one- two- and three-tier cakes using several décor mediums. This course is aimed at the ambitious home baker – someone who loves making cakes for family and friends, watches the Food Network religiously, and knows that s/he can be their own family’s Ace of Cakes with the right training. By the end of the course, students will be able to build any style celebration cake covered in French buttercream or rolled fondant. Many decoration mediums – marzipan, gum paste, royal icing, tempered chocolate, and sugar – will also be covered. Schedule: Class will run for 3 weeks, (April 12 through April 30) Monday-Friday, 8 am – 3 pm in Gaithersburg. Lunch will be provided daily.
